Over the weekend I found myself replacing storm windows with screens and letting fresh air into the house. Soon I could hear chirping birds, the rustling of squirrels on nearby trees, and other telltale signs of urban wildlife. My cat, Clementine, was thrilled with this turn of events—her only problem was an inability to choose the best window at which to perch.
A trip to the grocery store helped give me confidence that the warmer weather may indeed be here to stay. I walked past shelves of seasonal treats and pastel colored goodies, and I began to think about going home and whipping up a cake. This is fairly unusual for me, as I typically veer more toward savory dishes and main courses in my cooking adventures. But I decided to seize the moment, so I picked up a few baking items I knew I’d need and headed home.
I’m pleased to report that my cake came out well. Even the meringue layer I attempted was a success—despite the fact that I’d forgotten some of the basic rules of meringue making (I’ll chalk it up to springtime luck). Best of all, I had enough fun with this baking project that I think I may be on a bit of a dessert kick going forward.
